Abstract
Presently, fruit juices are pasteurized by thermal in food industry to inactivate enzymes and microorganisms. However, application of high temperature affects the nutritional and sensory qualities of juice. Ultrasound extraction and ozone treatment are promising non-thermal technologies which minimize the loss of nutritional qualities of fruit juice. The study focused on optimization of Roselle fruit juice extraction using ultrasound treatment. Response surface methodology (RSM) was used to investigate the effect of ultrasonic time and sonication temperature on juice yield. Sonication of Roselle fruit juice had increased the extraction yield by 11.53 % in comparison with the sample without ultrasonic treatment. The study also investigated the effect of ozone processing on physicochemical characteristics (pH, titratable acidity (TA), total color difference (TCD), ascorbic acid (AA), total phenolic content (TPC), and total anthocyanin content (TAC) of Roselle fruit juice. Roselle fruit juices were ozonated with processing variables of juice sample (Filtered I and Filtered II) and treatment time (0 to 30 min). Ozonated Roselle fruit juice showed similar pH and TA to the untreated juice. Significant degradation (p < 0.05) in TCD, AA, TPC and TAC over ozone processing time were observed. However, degradation of AA was less than 50% showed that ozone has the potential to prolong the shelf life of Roselle fruit juice. Filtered I Roselle fruit juice showed higher nutritional value than Filtered II Roselle fruit juice. The results of this study demonstrate the effectiveness of ultrasound extraction and ozonation in preserving the nutritional quality attributes of fruit juice compared to thermal pasteurization.
