Abstract
Introduction: Instant noodle nowadays has become one of the top most favorite food especially among students and singles. Instant noodle has been categorized as food waste because there is no nutrition content within it. On the other hands contamination of food product including instant noodle by heavy metal such as arsenic from air, soil and water pollution might be occur. Objectives: This study was conducted to determine the concentration of arsenic in instant noodle and to assess the health risk of student in Selangor Matriculation College. Methodology: A cross-sectional study was conducted among 132 respondents. Student who currently consume instant noodle was selected as the samples in this study. A set of pre-tested questionnaire was used to obtain most preferable brand of instant noodle consumed by respondents, information such as socioeconomic, frequency consume in a week and factor influencing instant noodle consumption. Seven different brands of instant noodles which the most consumed were chosen based on questionnaire responses. The samples were prepared by dry-ashing method and arsenic concentration was analyzed by using Inductively Coupled Plasma Mass Spectrometry (ICP-MS). Hazard Quotient (HQ) and Lifetime Risk Cancer (LCR) for respondents were calculated to determine the non-carcinogenic health risk and carcinogenic health risk. Results: The arsenic concentration detected in all samples were below the standard of (1 mg/kg). The Hazard Quotient of respondent in three brands instant noodle show that possible health risk may develop due to HQ>1. The Lifetime Cancer Risk still in acceptable range between 1 x 10¯⁶ to 1 x ¯⁴. Conclusion: Arsenic was detected in all samples. The Hazard Quotient of consuming three brands of instant noodle was larger than I if the dietary intake ≥ 2 times per week. Therefore, student were suggested to limit the intake of instant noodle to avoid any possible risk to health. Keywords: Arsenic, Instant Noodle, Hazard Quotient, Lifetime Cancer Risk
