Abstract
Fern is wild plants with spores and are some of the oldest living plants on earth, were analyzed and compared for their nutritional composition. Parameters measured were moisture, protein, fat, crude fibre, ash and mineral content, using AOAC (2000) methods. The nutritional values ranges found for each sample, were as follows; moisture (87.61 %-91.48%); protein (2.05%-3.57%); fat (0.97%-1.74%); crude fibre (0.67%- 1.21 % ) and ash (0.69%-1.28% ). Significant differences (P<0.05) existed between the samples in the proximate composition. Paku ikan (Athyrium esculentum) (3.57%) showed significantly higher (P<0.05) between paku miding (Stenochlaena palustris) (3.10%) andpaku kubuk (Nephrolepis biserrata) (2.05%) on the content of protein. Fat content of paku miding (1.74%) were significantly higher (P<0.05) compared to paku kubuk (1.59%) and paku ikan (0.97%). Paku kubuk (1.21 %) had significantly higher (P<0.05) content of fibre compared to paku ikan (0.97%) andpaku miding (0.67%). The mineral contents and concentrations for each parameter were (417.80-447.75 mg/g) for K, (7.17-9.72 mg/g) Zn, (1.65-7.23 mg/g) Mn, (4.95-7.45 mg/g) Fe, (29.78-32.60 mg/g) Mg and (8.85-16.10 mg/g) Ca. Paku ikan had a high content of trace minerals (Zn and Fe) whilst macro minerals (Mg and Ca) content was high in paku kubuk. Significant differences (P<0.05) existed between the samples in the K and Mn contents. These variations might be the availability of the minerals present in the soil and water and their ability of each fem to absorb it.
