Abstract
Fouling deposit formation in food industry is severe due to the food composition. Cleaning-in-place (CIP) is one of the important process to maintain the hygiene and processing environment in food factory. In this project, cleaning studies has been done based on fat-based fouling deposit. The methods used for fouling deposit formation are using ex-situ and in-situ method. Two types of fat-based fouling deposit which is refined, bleached and deodorized palm oil (RBDPO) and margarine was being studied and the best fouling deposit is chosen to be the physical model for cleanability experiment. Cleanability experiment was emphasized on two cleaning parameters which were temperature (35, 40 and 45 ) and fluid velocity/shear stress (20, 30, 40 and 50 rpm). The cleaning kinetic has been studied where two stages in cleaning profile is identified which are rapid stage and gradual stage. Cleaning response in both stages was investigated by using an effective removal rate constant . The results show that the shortest cleaning time recorded is 2 minutes using 50 rpm speed of stirrer at 45 where the effective removal rate constant at both stage recorded the highest value; with 0.6912 and with 3.7448.
