Abstract

Pilot scale dry fractionation of palm olein process was studied. In the first part of this work, the effect of crystallization temperature and agitation speed on the crystallizing behavior of olein were studied. The time taken for olein to reach the crystallizing temperature and duration of constant temperature were obtained from cooling curve of olein crystallization. The data was plotted in graph and analyzed. It was found that the variation in crystallization temperature gave a more significant effect to the crystallization of palm olein than the agitation speed. Generally, the time taken for olein to reach the crystallizing temperature and the duration of temperature constant period both increased with crystallization temperature. The effect of crystallization temperature on the properties of fractionated products such as iodine value (IV), slip melting point (SMP), and cloud point (CP) was then studied. It was found that higher crystallization temperature produced lower IV, higher CP superolein and higher IV PMF. Besides, it was also found that the variation of crystallization temperature gave no effect on the SMP of PMF. In terms of viscosity of the partial crystallized slurry, lower crystallization temperature produced a more viscous slurry with higher crystal content. A higher viscosity slurry also resulted a higher IV, lower CP olein and a lower IV PMF. Slurry viscosity did not show correlation with the SMP of PMF.
