Abstract

Artocarpus heterophyllus Lam, or jackfruit, is a non-seasonal plant with many uses. The main objectives of this study were to develop the production of carboxymethyl starch (CMS) by utilizing jackfruit seed and to determine the characterization of CMS . Starch extracted can converted to CMS by etherification process using sodium hydroxide and sodium monochloroacetate acid (NaMCA). The jackfruit seed pieces were treated with a few soaking and washing steps prior to drying and milling treatments. Obtained Jackfruit seed powder (JSP) was undergone three pretreatment steps which are bleaching process, alkalization process and etherification process to obtained carboxymethyl starch (CMS). hence this work is carried out to measure the characteristics of CMS from jackfruit seed comparison with commercial carboxymethyl cellulose (CMC) Waris Nove and Sigma Aldrich. The production of CMS from jackfruit seed are successful and the yield is 19.7%. From analysis, it is found that CMS jackfruit seed contained high moisture content. In addition, CMS Jackfruit seed also has the lowest value of bulk density, tapped density and true density. These factor affected the flowability of powder which is passable flowability. The viscosity of CMS Jackfruit seed are increase as the solution concentration increase. The color obtain for CMS Jackfruit seed is white based on L*, a* and b* value. For CMS jackfruit seed the presence of a new and strong absorption band at 1640.27 cm −1 confirms the stretching vibration of carboxyl groups (COO−). In conclusion, CMS jackfruit seed is incomparable to commercialize CMC and lots of further study is needed in order to substitute CMC for many industries
