Abstract
Jackfruit (Artocarpus heeterophyllus Lam) is available in Malaysia. Jackfruit is one of the largest tree-borne fruit and basically the shape is round-cylindrical with dimension 30-100 cm in length and 25-50 cm in diameter. Jackfruit waste usually end to as a waste and discarded the valuable material hence it could convert into valuable product by extracting the pectin. The aim of the research are to determine the yield of pectin extraction from Artocarpus heeterophyllus Lam J33 (Nangka Madu) using the combination Ultrasound Microwave Assisted Extraction (UMAE) and Microwave Ultrasound Assisted Extraction (MUAE). The effect of pH, sonication time, microwave power and irradiation time on the yield of pectin were investigated. Under optimized condition at pH = 1.8 irradiation time = 4 minutes, microwave power = 554.41W and sonication time = 27.63 minutes the highest pectin yield extract was 13.01% and DE 32.11% using (MUAE) method. The second order polynomial equation was developed to determine the optimum condition that maximize the yield and DE of pectin. While degree of esterification (DE) was determined using Fourier Transform Infrared Spectrocopy (FTIR) and the results 41.23 %. The yield of pectin adopting the MUAE method was higher than UMAE method. The morphological structure from SEM analysis of pectin extracted from UMAE and MUAE closely resemble each other. An extraction pectin using MUAE method give a smaller size of particle and smooth surface compared to UMAE method. In conclusion, MUAE method give highest yield 13.01% hence MUAE method was the most effective compared to UMAE method.
