Abstract
Durian is a climacteric fruit which is highly valuable and contains high nutritional values. Since durian has unique characteristics in terms of rinds, thickness, shape, size and smell, the non-destructive evaluation of the fruit maturity is of importance. Thus, the aim of the study was to investigate the potential of thermal imaging as a device to detect the maturity level of durian by correlating the thermal image parameters of durians with its physicochemical properties i.e. soluble solid content, moisture content, firmness, color and pH. Thermal images were obtained from durian kampong (D24) at different maturity stages (unripe, ripe and overripe). The thermal images were analyzed using selected thermal parameters i.e. maximum intensity, minimum intensity, average intensity, mean of region of interest (ROI), maximum of ROI and minimum of ROI. One-way analysis of variance (ANOVA) was performed to determine the effect of physiochemical properties on the thermal parameters. In order to show the clustering performance of different characteristics of physicochemical properties and thermal parameters according to the maturity level of durian, Principal Component Analysis (PCA) was conducted. The results showed the best clustering performance among the PCs with total of variance from PC-1 and PC-2 was 66%. PC-1 has captured 42% of variance and PC-2 has captured 24% of variance in separating into three maturity levels. It demonstrated that the PCA model was able to classify the maturities levels of the durians accordingly. Partial least square (PLS) regression was also carried out to develop calibration and prediction models. The PLS models showed a good coefficient of determination (R2) of greater than 0.90 for all physicochemical properties of durian. Hence, this study demonstrated that thermal imaging system could be a non-destructive device for detecting the ripeness of durians
