Abstract
Introduction: Most of our home cooked food requires the use of cooking oil as it had become a kitchen staple. To lessen the burden of cost, using the same cooking oil repeatedly is a common practice among households. However, this practice will release harmful compounds which give bad effects to human health. Long term consumption of repeatedly heated cooking oil (RHCO) will trigger the non-communicable diseases such as hypertension, diabetes, tuberculosis, cancer, and many more will be developed. Objectives: Hence, this study is conducted to determine the level of knowledge and practice of RHCO among households. Method: This cross-sectional study involved 126 of respondents from residents in Balik Pulau. A purposive sampling was conducted among households within the residential area. Then, the selection of respondents was randomly selected from a list of townships. A set of questionnaire were given to respondents through online survey. The questionnaire was distributed to the respondents from 12 selected townships. The questionnaire consist of 4 sections which were, section A (Socio-demographic information); section B (Knowledge on the usage of repeatedly heated cooking oil); section C (Practice of the usage of repeatedly heated cooking oil) and section D (Recommendations). All data were analysed using descriptive analysis, chi-square test, simple logistic regression, and multiple logistic regression. Results: The results demonstrates that majority of respondents had good level of knowledge (88.1%). However, 57.9% of respondents admitted that they utilise the heated oil repeatedly. Based from Chi-square analysis, there was a significant association between knowledge level and gender was found (X2 = 5.357, P = 0.021). Aside from that, the associated factors that had significant association with practice level were gender (X2 = 7.311, P = 0.007) and total household monthly income (X2 = 5.668, P = 0.017). Besides, the variables of knowledge level (COR = 3.275, 95%CI = 0.877, 12.264, P = 0.078), gender (COR = 3.358, 95%CI = 1.358, 8.303, P = 0.009) and total household income (COR = 2.429, 95%CI = 1.162, 5.079, P = 0.018) were also found to have significant association with practice level from simple logistic regression analysis. Multiple regression analysis results showed that gender (AOR = 4.916, 95%CI = 1.661, 14.547, P = 0.004) and knowledge level (AOR = 5.461, 95%CI = 1.186, 25.148, P = 0.029) were the factors predicting the level of practice of RHCO. Conclusion: High knowledge is not a determinant of good practice regarding the repeated use of cooking oil. However, practice was determined by gender and total household monthly income. Local governments and related organizations should work hand in hand to tackle this issue of concern through every medium so that more awareness was developed within public consumer.
