Abstract
The content of ferulic acid in northern Sarawak rice cultivars was determined in this study. This included variation of the ferulic acid content with bran colour among the cultivars. Fifty three rice samples were collected from northern area of Sarawak. Ferulic acid was extracted and hydrolysed from rice samples before analysed with UV-Vis spectrometer at 345 nm. The content of ferulic acid in the rice cultivars ranged from 0.714 to 2.034 mg/g. Keladi from Menitam had the highest amount of ferulic acid (2.034 mg/g). Results showed that pigmented rice has higher amount of ferulic acid compared to non-pigmented rice. This indicates that northern Sarawak rice cultivars have good potential for further research and development in health food industries.
