Abstract
Rice represents a staple food group for many cultures and rich in carbohydrate and nutritional components such as γ-aminobutyric acid (GABA), gamma oryzanol and vitamin. A study was conducted to evaluate the gamma oryzanol content in selected northern Sarawak rice cultivars. Fifty-three rice cultivars collected from northern Sarawak were examined. The rice samples collected from northern Sarawak were analysed for gamma oryzanol content. A solvent extraction method was used to extract the gamma oryzanol in rice. Hexane was chosen to extract the gamma oryzanol content and measured by UV-Vis spectrophometer. Results show that gamma oryzanol content in the northern Sarawak rice cultivars varied from 411.02 to 1222.48 μg/g. Padi Hitam Keladi had the highest amount of gamma oryzanol while the lowest was in Bario Merah from Batu Niah. This study showed the potential of gamma oryzanol that extract from brown rice as a source of antioxidant and health promoting products.
