Abstract
Forward osmosis (FO) is an osmosis process which induces by an osmotic pressure gradient between feed solution (FS) and draw solution (DS). Due to the difference in solute concentration, the osmotic pressure difference is created and forces the permeates from FS to transfer across the semipermeable membrane to DS. This study establishes a FO system to concentrate clarified passion fruit juice by using cellulose triacetate (CTA) membrane and potassium sorbate solution (2M to 5M) as DS. In this study, transmembrane flux and Brix were evaluated by using different concentrations of DS. The highest average of transmembrane flux (6.705 L/m2 hr) and highest increased of Brix value (0.57°± 0.03) were observed when using 5M potassium sorbate. When 5M sodium chloride solution was compared with the performance of 5M potassium sorbate solution, it showed greater significance on transmembrane flux (7.790L/m2 hr) and Brix increment (0.73 ° ± 0.07). The event of reverse salt diffusion (RSD) was observed as traces of DS (potassium sorbate or sodium chloride), which were found through the Fourier-transform infrared spectroscopy (FTIR) spectrum analysis of concentrated clarified passion fruit. More fouling on the surface CTA membrane was found when conducted FO process at 5M when compared with 2M of potassium sorbate. When compared to commercial passion fruit juice which concentrated through evaporation, clarified passion fruit juice concentrated by forward osmosis preserved the quality of juice better.
