Abstract
Food irradiation is applying ionizing or non-ionizing radiation such as gamma rays, xray and electrobeam in order to prolong shelf-life, prevent spoilage, and eliminate food borne disease. Gamma irradiation is an ionizing radiation use radioactive isotope Cobalt-60 to preserve the food without depletion of nutrient compositions. Carica papaya Linn has a short shelf life which last for 4-7 days at 25°C and 2 weeks at 12°C, therefore, irradiation can prolong the shelf life of fruits. In the present study, the effects of gamma irradiation on proximate composition of Carica papaya Linn. Var Sekaki powder was studied. Carica papaya Linn powder was subjected to gamma irradiation at the dose of 3 kGy, 6 kGy and 9 kGy at Malaysian Nuclear Agency and non-irradiated as control. The experiment was carried out in triplicate and the result was expressed in mean and standard deviation using analysis of variance (ANOVA). The samples were evaluated on moisture using air-oven drying method, ash by heating in muffle furnace, total available carbohydrate by using clegg-anthrone method, protein by using Kjedhal method, fat by using Soxhlet extraction and crude fiber by digestion with acid and alkali. The result showed protein and crude fiber was significantly difference (p<0.05), meanwhile moisture, ash, total available carbohydrate and fat were not significantly difference (p>0.05). Overall, above observation denoted that radiation processing of foods has proven to not deplete nutrient contents of fruits. Hence, only slightly changes were notable on moisture, ash, total available carbohydrate and fat thus these changes were not affected it value upon irradiation at dose up to 9 kGy.
