Abstract
Pectin is a plant-derived substance that has potential as an environmental friendly packaging film. The pure of pectin films is highly soluble in water. However, additional puree in pectin films can improve the water solubility of pectin films by reducing the free volume of the pectin's polymeric structure. This study aims to determine the effect of incorporating fruit puree in pectin films on solubility and thermal stability. This study involved three different pectin films; pectin film (acts as control), papaya-pectin film, and pineapple-pectin film. All three films were added with glycerol which acts as the plasticizer. Thus, the compositional ratio of pectin:glycerol:puree (1:0.5:1) was used to prepare these films. The objective of this project was set to investigate the water solubility and thermal stability of papaya pectin films and pineapple-pectin films stored under different storage conditions Including ambient, chilling,and freezing temperatures. Water solubility, thermogravim try analysis (TGA), and differential scanning calorimetry (DSC) were conducted for these purposes. The water solubility study incorporated the fruit purees in pectin films with the lower solubility percentage compared to the pectin film (control). The pectin films stored in ambient temperature are found more soluble than the lower temperatures. For DSC analysis, Tg of the pectin films decreases due to the presence of each fruit puree in the pectin films. However, there is no significant difference at Tc although in the presence of each fruit puree in the pectin films. The TGA study shows that there is no significant difference when the pectin films lost about 10-15% of the mass. Nevertheless, the incorporation of fruit purees in the pectin films has shown a lower decomposition temperature than the control pectin films.
