Abstract
Emping or also known as flaked rice is a flattened carbohydrate rich edible food that obtained from processing of immature glutinous paddy. This research is conducted to determine and predict the shelf life for Malaysian glutinous rice flakes at different types of packaging materials. The packaging used are polypropylene (PP), low-density polyethylene (LDPE) and polyvinyl chloride (PVC). The study was also done to compare the characteristics of rice flakes from three different packings, including pH, moisture content, and colour. The best packaging will be chosen by measuring the shelf life of the rice flakes after being packaged in different packaging and were stored in different relative humidity which are 10%, 33%, 43%, 74% and 83%. The method used in determining the shelf life of the rice flakes is by using the Guggenheim-Anderson-de Boer (G.A.B) model. Water vapour permeability coefficient of the packaging will also be used to determine the best packaging. From the study done, the physical properties for rice flakes which are pH, and color remain constant. The weight however shows different for the rice flakes with the highest water gain is at 83% relative humidity and the highest moisture loss is at 10%. Relative humidity at ±55% shows the least water gain or loss thus making it the best relative humidity for the storage of rice flakes. The best packaging material is PP as the shelf life for the rice flakes was predicted to be 42 days. The second-best packaging material is LDPE with the shelf life of days 28 days and lastly PVC with the shelf life of 14 days at 24.6%°C and 74% relative humidity experimentally. In conclusion, the best packaging material is polypropylene (PP) and the best relative humidity to store the rice flakes is 43%.
