Abstract

This project was conducted to investigate the mechanical behaviour of ice cream though compression tests and mechanical model. In the compression test, the modes used were uniaxial compression, stress relaxation, and cyclic compression, whereas the model considers finite element method using microstructure image of ice-cream obtained from literature. In compression test, the samples of ice cream used are in three conditions: frozen, 10 minutes after frozen and 20 minutes of frozen. The results showed that ice cream sample after frozen had the highest stress-strain curve compared to than other samples. In addition, during uniaxial compression test, when speed is high, the ice cream is stiffer than lower speed. Three of the samples ice cream shows exhibit possible time dependent behaviour from relaxation test for three different strains (stress decay over time at constant holding strain). In cyclic test, there has no strain no strain recovery from the unloading curve for all samples, indicating perfectly plastic behaviour of the ice-cream. Finally, a finite element model based on the cryo-SEM image of ice-cream showed higher stress concentration around the bubbles boundaries
