Abstract
This study was carried out to prepare and characterize jackfruit straw/starch (JSS) edible films at different weight ratios (8JS:2S, 7JS: 3S, 6JS:4S, 5JS:5S and 4JS:6S). The film containing 4g of JS and 6g of starch (4JS:6S) had been used as the controlled film due to its high tensile strength (TS), Yong’s Modulus (YM) obtained from the tensile test. In addition, the film also had the brightness color of the film and lower yellowish index (b*). However, the thermal properties of controlled film had lower thermal degradation. The films were then prepared with the addition of different types and concentrations of plasticizer (glycerol and sorbitol) at 15%, 25% and 40%. The addition of plasticizer into the film had modified the properties of the edible films. From the result, the presence of glycerol and sorbitol at concentration of 15% results to high TS, YM and lower EAB values. However, both plasticizers results to lower brightness and yellowish index (b*) of the film. The thermal properties for both plasticizers had the same thermal degradation. In addition, the properties of JSS films and plasticized JSS films with the addition of a natural agent (thymol) as an antimicrobial agent at a 3% concentration were investigated. The JSS film and plasticized films containing glycerol and sorbitol at 15% concentration were used for the next film procedures where the film properties were studied with the addition of thymol. The addition of thymol had influenced the physical, mechanical and thermal properties of the films. Based on the result, the JSS film with the best loading weight ratio was 4g of JS and 6g of starch. Meanwhile, the sorbitol at a concentration of 15% was the suitable plasticizer compared to glycerol.
