Abstract
Jackfruit (Artocarpus heterophyllus L) is a popular fruit in Malaysia and well known for its antioxidant properties. In the fresh form, jackfruit bulbs deteriorate easily and have low shelf life. Hence, it is important to properly pack the flesh after cutting the fruit to avoid browning that will lower the quality of the bulbs. In this study, effects of vacuum packaging on jackfruit bulbs were observed and the jackfruit bulbs were then processed into puree to be used to produce ice cream. The ice cream samples produced were then tested to check on the effects of jackfruit bulbs storage conditions (chiller and freezer) on the quality of ice cream in term of hardness and melting rate. Analysis conducted showed that freezer storage (-12°C) resulted in a longer shelf life than chiller storage (5°C). Vacuum packaging enhanced the shelf-life of the jackfruit bulbs up to 3 weeks in chiller storage and over 6 weeks in freezer storage. The hardness and melting rate of ice cream showed that, jackfruit bulbs at week 4 under freezer condition gives the preferable results compared to others
