Abstract

Monopterus Albus commonly known as Asian swamp eel or 'belut sawah' are widespread type of eel found in Malaysia. This eel is a high-protein source of food (50.07 to 74.31%), contain healthy nutrients is very good for human body for tissue repairing as well as improve immune system. This study is focused on the effect of maltodextrin on nutritional value, physiochemical and functional properties of eel protein powder. Maltodextrin at different concentration which were 25 and 100% was added to the feed and then spray dried at 160°C inlet air temperature. The amount of protein, moisture, fat and carbohydrate in the protein powder at maltodextrin concentration of 25 and 100% were 4.4 and 0.7, 8.6 and 8.5, 0.2 and 0.1, 86.4 and 90.6 (%) respectively. The vitamin C and the yield of protein powder were increased with the increasing of maltodextrin. Protein powder with 25% maltodextrin was further analysed for the amino acid and fatty acid profile. The total amino acid is 15.14 mg/g extract with the highest for essential and non-essential amino acid were phenylalanine (2.08 mg/g) and glutamic acid (1.74 mg/g) respectively. Meanwhile, palmitic acid was recorded as the major fatty acid. The lightness and tap density of powders increased with increasing of maltodextrin while the pH remains constant at both concentrations. The spray-dried eel powder had the higher water binding capacity and protein solubility at 100% maltodextrin which were 21.2 and 27.14%. Meanwhile, the foaming capacity of the spray-dried eel protein powder with maltodextrin at 25% was higher (126%) than 100% (108%). From the study, the concentration of 25% maltodextrin is more favourable to produce the eel protein powders from Monopterus Albus by using the spray-drying process at inlet temperature of 160°C. The powder offers good source of high-quality amino acids and both MUFA and PUFA content. This study indicated opportunities to produce value-added products from eel farm and processing the by-products such as food enhancer, health supplement and as ingredients for topical medication. Future study should be done especially on the effect of drying method or utilization of other additives in the feed during spray drying on the quality of the powder.
