Abstract
Daily cleaning and disinfecting in the food industry is compulsory. These processes however take times and have high operating cost due to high water and chemical consumptions. An effective cleaning method, right chemical formulation and a good design of cleaning device can reduce cleaning time. In this project, we aim to develop the concept design for a portable electrolysis cleaning unit that able to produce an Acidic Electrolyzed Water (AEW) (pH 2-3) and Alkaline Electrolyzed Water (AIEW) (pH 12 - l3). These liquids can act as a disinfectant and cleaning agent respectively. Both of these solutions are environmentally friendly and can be used as a replacer of the commercial cleaning solution. This concept design is being proposed to be used in food manufacturers of Small Medium Enterprise (SME) as they have major constraints on a limited budget and storage chemical space. The usage of this cleaning unit could help SME in Malaysia to improve cleaning efficiency. The Theory of Inventive Problem Solving (TRIZ) contradiction matrix and 40 inventive principles solution tools were applied in the development of the cleaning unit. The final conceptual design has undergone several modifications so it will have proposition value purposes. Market validation was performed to obtain prospective buyers opinion on the cleaning rig. These portable cleaning unit design is targeted to supply a continuous high speed of hot water at about 10 L/min and 70°C. The respondents who are participated in the market validation are showing a good response to implement the electrolysis cleaning units in food industry. The initial investment of this electrolysis cleaning unit would be around RM 10,000 - RM 19,999. In conclusion, the development of a new the conceptual design of a portable electrolysis cleaning unit is proven to be relevant for SME factory applications.
